I think it helps keep the meat a little more moist personally. In my smoker, I have a homemade damper between the Fire Box and Cooking chamber to make the hole smaller and help redirect the heat. I put the water pan directly on top of that which has helped level off the temperature between the 2 sides of the Cooking Chamber. It is one of those things that you will have to test and see what works best for you and your smoker.What's the advatge of keeping a water try in a offset smoker?
