Not too familiar with your smoker, I would if I were you go to the forums & in the charcoal or propane areas, as this if not mistaken is a combo smoker .... Ask in a few different threads as to people's experience with these smokers ! I know there are some Smoke Hollow users on here that I'm sure would be happy to help ya ! Also, there is some info if ya put in your smoker info into the search bar at the top ! Hope any of this helps ! I have a WSM 18.5 & I know on that smoker the water pan is used for temp. control.... Again, hope any of this helps !

IMHO, yes.... I have a pellet grill as well that uses just that, wood pellets of different kinds... Hickory, pecan, apple, etc.... It uses NO water pan & it turns out some very, very juicy Q !

That's the case anyway with the WSM, can't think it'd be a huge difference with the SH's .... But ya may check with SH owners and be sure... But I'd bet on it being temp control !

I have limited experience. But with my offset, I have done some great tasting smokes with no water. Some swear by using it, again with my short experience, no water was necessary.
