How do need a water pan in a propane and wood smokers. But you don't need it in a pellet smoker. is it temp is hotter in propane then a pellet. does anyone use a water pan in a pellet. Thanks for listening

It's difference in the configuration of the smoker, not the heat source. Vertical smokers generally have the need for a baffle to maintain indirect heat, while horizontals are already indirect heat by design.
