Water or not???

Do I use a pan of water with my new Char-Broil smoker or not. Always did with my kettle type but dont see many folks on here using it with a smoker with a side fire box.
 
back when I used to use my SFB smoker(gave it away), I used to put a water pan near the area where the heaat from the sfb came into the smoker. worked pretty well.
 
Im not sure if its "the correct way", but when I am hot smoking something like turkey or chicken, I put sand or Firebricks instead of water in the pan. When i need to maintain a lower temp for a longer period of time I keep the water pan hydrated.
