Water or dry in pan

Do I use water in the pan or sand when I hot smoke ???Is water really necessary ??

Water isn't necesarry, but it doesn't hurt either. Just try cooking with and without and and go with what you prefer.

Water will slow your cooking so expect it to take longer than if you used no water or sand.
