Water bath sticks question

Iake casing less snack sticks. As of yet I have not giving them a water bath after smoking them. If I do give them a water bath will they soak up water being as they don't have casings on them?

I would NOT give them a water bath.   They might fall apart.

If you normally take them to 152 degrees internal, pull them from the pit at 150 and allow them to "cool" on the countertop. They will continue to "cook" and will more than likely hit 152.

A water bath for naked sticks would be a bad thing.
