I joined the forum mainly because I get the Smoking Meats newsletter and love the recipes.

I figured I could probably learn from this forum so here I am.

I've been using my gas grill with a variety of purchased and homemade smoke boxes for a few years with great success.  I finally got tired of having to replace my wood every 20 or 30 minutes so I bought an MES 30 in November.  Of course they dropped in price a few weeks later but I'm happy with my purchase.  I got mine from QVC who as far as I can tell is the only retailer that sells the model with wheels and a push/pull handle.  It may seem trivial but I love having the ability to roll it in and out of my shop.

So far I've only used it for small smoke jobs like jerky, armadillo eggs and sausages.  I've got a bone in beef rib roast and a pork crown roast in the freezer that I can't wait to smoke up.  I'll be smoking 3 racks of baby back ribs in a couple days.  My lips are smacking just thinking about it.

I'm going to buy the cold smoker attachment soon and start smoking cheeses.  I can hardly wait.

Hello and welcome from East Texas. This is a great site, lots of information and great people that are willing to throw in their two cents worth on about anything.
