Newbie here! I am from North Alabama and have recently gotten into BBQ. I have a Brinkman Gourmet with a few Mods from here. I also have a Great Outdoors Vertical Charcoal smoker with Mods too. I have enjoyed the site so far and learned a good bit. I have smoked a few butts ,chicken and ABTs so far. I am almost ready to venture to brisket but need to complete my Brinkman Mods before doing that. I have allot of BBQ books that I enjoy reading but seeing Qveiw and this site has helped more. WAR EAGLE!

First off Welcome Dad to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Most folks are kind of intimadated about doing their first brisket. Just remember these few simple things:

1) Don't over think the rub. Keep it simple for the first one and after you have tasted the meat, think about what other flavors you want to invite to the party on your next brisket smoke.

2) The brisket is a big hunk of meat; take your time and don't try to rush the cooking process.

3) It's done when it's done.
