Want to smoke 2 or 3 Pork Tenderloins for Thanksgiving

Our household is on a strict diet (for medical reasons); therefore my smoking and cooking will be curtailed for the next 3 or 4 months; however, that doesn't mean we won't fall off the wagon come Thanksgiving and Christmas. We'll just have to limit how far off the wagon we fall.

I'm thinking that some pork tenderloins will be one way to keep calories low and flavor high. If anyone has recipes and suggestions for smoking pork tenderloins, I'd be much obliged.
 
best advise I can give for tenderloins is BRINE.. smoke with apple wood until IT of 150`

here is a apple/cinnamon sauce I use on my pork... add a spoonful on each slice

Apple Cinnamon Sauce
Finely chop two large or three medium sweet apples (Fuji or Gala are great varieties for this) and place in a saucepan. Add one tablespoon sugar, one-half teaspoon each of cinnamon, paprika, salt and white pepper, and two tablespoons rice wine vinegar. Cover and bring to a boil over medium heat, then lower to a simmer. Cook gently until the apples are tender.
 
If your willing to fall a little farther off the wagon..doing a bacon weave and wrapping the loins in that while smoke keeps them very moist as well!

If you want to keep it healthy maybe a low calorie gravy....
 
X2 on what Pit 4 brains said. Id cure 1. That way you would have 2 different flavors with the same cut of meat.Also by doing this you take up more room on the plate so it looks like your eating more than you are.
 
You can always try stuffing one too! Just butterfly it, stick some goodies inside, & wrap back up. They're small so be careful, but well worth the work.
 
Interesting, I would not have guessed that a pork loin would be 12.58% fat. I'm used to thinking a pork butt is generally around 20%fat.
 
 
I don't know what you health and diet requirements are but comparing Turkey to Pork Tenderloin, the Turkey is much healthier. Check this out...JJ

But the difference in calories is miniscule compared to the tremendously more flavorful pork tenderloin. I'm prepared to take on the fat for this one meal. The protein is only modestly better with pork, but then, again, the diet we are on is a high protein regimen (and medically supervised). I'm sure I'll catch a lot of flak from the medical folks for the extra fat, but I'm going to be on this diet for months. Thanksgiving and Christmas will be exceptions but I'm not going to "pig out" - as much as I'd like to smoke a couple of butts and maybe a ham.

Again, I'm very grateful for the information and the suggestion.
 
I to am trying to limit my Carb intake and finding I had no idea how much Pasta, Bread and Sugar there was in my diet. I wish you luck as any diet is hard. Take care...JJ
