In the meantime what other apparatus do I need. I've had many grills in the past but never had a one that had a decent thermometer on it- do I need to buy a thermometer  What other gear do I need to help me become a decent smoke chef?  Paul

A remote therm is a thing of convenience besides being an accurate measure of temp. It is really nice to have the remote in the house so you don't find yourself going outside looking at your smoker all day long and you can set up alarms to alert you of temp changes.  It is nice to be able to go about your day and not worry about temps. I have a Maverick and I love it, maybe the best investment beside my smoker.
 
I have many questions and am completely naive about smoking. For instance- how do you control the temp when you're cooking with charcoal?  Paul
