Thanks Jed, I do love me the burnt ends and costco sells the belly already skinned and cut into perfect width strips. I wonder how a Thai peanut sauce ends would work? might try that next.

My daughter (20) who usually is not a huge fan of smoked meat has been eating the left over drums cold and wants more soon.
