Since I read a thread on casingless jerkey, my son and I have been doing this every weekend it seems.
Got another 5 pounds going in now at 140 with some hickory dust.

Them looks good, I like doing the caseless sticks sometimes yours look great What flavor did you do?

This was a "standard" mix, and I smoked it with hickory. I have another regular and kippered mix to try yet .

So far other than my mother one time helping me make sausage, the only kind of help I've received from family, is to make the goodies disappear. Although my son is starting to show some interest. We'll see.
