Ok I think I might have a similar recipe down in my shop files - I'll see if I can dig it out for you tomorrow...
All right this is the only mild one that I have been able to find...

4 lb. deer

1 lb. bacon

5 Tbsp salt

1/2 tsp black pepper

2 1/2 Tbsp brown sugar

1 1/4 tsp crushed peppercorns

I haven't gotten around to trying it yet so I can't really say how close it is to what they make in Belleville. If you do decide to try it, I'd cook a small test patty before you stuff it to see what you think in case you need to make any adjustments. I would also add cure #1 to it.

I have one other place I can check later & if I come across any others I will let you know...

If it's fairly fatty yeah you can use it. 1 tsp cure #1 will do you
