I think I am ready to get into the sausage making.

I have a very old hand crank stuffer and a grinder as old as the stuffer.

I have ground venison and 5 lb ground sausage.

Can I make anything out of it?  Snack sticks?

Sure can - you can make snack sticks or bologna easily

  Sounds like you have an old Enterprise lard press/ stuffer - they are pretty tough old machines...
 
Ha.  I dont know the name of it but we pressed lard and made fresh sausage with it.
 
Would love a good bologna recipe.
 
I use a recipe from dales cookbook, a guy out of Wyomissing Pennsylvania for my snack sticks, they are the most amazing snack sticks I've Eaton or made. For bologna I use the pa Dutch country sweet mix from con Yeager, it makes 25 lbs at a time and you need pink cure salt. Kinda everything from pa, haha I think con Yeager spice is from Pittsburgh

Hey Adam,

This isn't exactly the question that you asked, but I did want to tell you that I absolutely LOVE Pop's breakfast sausage recipe used to make bulk venison breakfast sausage.  I calculated out his spices on a per weight basis, but dropped the salt down significantly as my husband and I don't like salty sausage.  I've received nothing but compliments on it.  

Venison Breakfast Sausage (adapted from Pop's recipe):

80% lean venison/20% pork fat
1.1% pickling salt (calculated based on weight of meat + fat)
.3% ground sage
.3% freshly ground black pepper
1/2 tsp brown sugar per lb of sausage meat
scant 1/4 tsp red pepper flakes per lb of sausage meat

Anyway, didn't answer your question, but hope you have fun with your new toys!

They are NOT new. LOL.   They were my grandpaps and I remember using them when I was a little kid.

No. What we have made isn't sweet. The amish in Belleville makes it.

cf, I'am just about getting into doing sausage making as well as bacon too.... Wow, is this forum the best... Ya have a question & ya get answers for sure... I'll be watchin for your new venture as I'am starting mine... Just savin up the last few $$ to get a grinder & stuffer... As well as waitin for the price of pork bellies and such from a few local butchers... Can't wait to get started !! If it just wasn't for work gettin in the way ! :laugh1: Could actually get somethin done !!!
