Venison Sausage Day...100#

South Louisiana-Yes, it is HOT
Weighed all the venison and it came to 37# of meat. Gonna go 40/60 Venny and pork. Got the meat thawing in an ice chest now and hope to get the first grind salted and back on ice tonight.

25lbs. venison/pork smoked sausage

25lbs. venison/pork fresh sausage

25lbs. venison/pork green onion sausage

17.5lbs. venison/pork breakfast sausage (not cased-in plastic tube bags)

Gonna be a busy day tomorrow! Gonna smoke the venison/pork smoke sausage tomorrow afternoon and put the goose pastrami on at the same time. Pics. to come.
 
Man, what a hectic day! almost forgot to take pictures with so much going on prepping for vacation! Here's some of the smoked sausage on the board ready to be packaged.


I have 2 boston butts cooling now and will pull those in an aluminum foil pan to take on the fishing trip. Waiting on them to cool a bit first though.
 
Damn, that's a lot of sausage! Looks great.
I am quickly running out of meat to make sausage...LOL! I do have a couple things left on the list- 30# of andouille to use up the beef middles I have and 20 or so pounds of wild hog boudin....

LOL! New toy , new freezer, and a whole lot of meat to process. We've been given 10 little wild hogs so far, and from those we have 150~160lbs. of meat. I gave 45lbs to my Dad to mix with his deer to make his sausage.

Did I ever tell you I like makin sasuages? I love eatin them too!
