The night I was making the Napoli salami, my cousin called...he was cooking that night at the firehouse and invited me over. Great! No worries about dinner while I finished up with the salami and cleaned up the kitchen. This is what awaited me...

Simple Country cajun roux gravy made with cajun fresh sausage, a camp staple. Can be eaten over grits or rice...I prefer grits.
