Those look great! I love smoking cheddar stix. My local butcher charges me 20$ for a 5# bag of high temp cheddar. I don't know if that is average or not. Great lookin stix.

I smoked these babies up last weekend. Sorry so late, I just figured out how to gat these pics off the iPad! I used 20% ground pork to ground venison with 10% high temp cheddar cheese. I love the sticks original, but the cheese really makes them even better.
Them some good lookin sticks - job well done now time to enjoy

I pay $14.99 for a five pound bag. I only put in about 10% cheese to meat weight so that bag is lasting me a while. 10% works out real good.
 
It costs me $34 for 5 lbs HTC from B&P to the front door... Great job on the snack sticks Quinn.......they look delicious..............

MIghty Quinn I live down in Canton what locker sells high temp cheese that cheap I will be up that way friday and need some for a big batch of sticks??  Nice to see someone from around the area on here.
 
Sorry guys on the late response. I use mahogany collagen casings. The cheese I use I get from the Meat Lodge on north Cliff. Call ahead of time, they carry 5 kinds of cheese but only had cheddar in stock when I was there.
 
I used a regular block of sharp cheddar last week in some venison sausage. Just cut it up in tiny squares and it turned out real well.
