Vacuum seal casing question

Why do you freeze them if you vac sealed? I have a few bags in my fridge for months and they look fine.

I never thought about that Richie. I usually freeze what I won't be eating right away. On my next batch I will just vac seal. Back to his question, moisture is causing the seperation most likely, not sure if you are using collagen or natural sheep casings, myself I prefer sheep casings or no casing at all..

Watch that video if you have time . It talks about different wall thickness of collagen casing .
I thought the slice pic of the sticks looked great . If you're happy with the taste and texture , I would leave as is .

I’ve watched it chopsaw. Thank you. It seems that I need to just not freeze them next time. The ones that I already have frozen I’ll cut them out of the bag and let them thaw not in the bag. Also Hoity they’re collagen casings from Walton’s for sticks. Thanks everyone this site really is full of some great and knowledgeable people! I just hope to be able to help others as much as I’ve been helped.
 
Ok, report back. The other batch that I had in the freezer I took out of the vacuum pack and put into a brown paper bag to thaw out and the casings stayed much better. Thanks guys!
 
I have just taken a pic of a 5 pack of my frozen Vac Packed snack sticks. These were frozen 3 days after packing. Always refrigerated before freezing. I will take picks after thawed and opened. I use a chamber vac unit. They were frozen for 2 months.

The only spot that detached was from the air bubble from the stuffing process., and was there before freezing.
