I never thought about that Richie. I usually freeze what I won't be eating right away. On my next batch I will just vac seal. Back to his question, moisture is causing the seperation most likely, not sure if you are using collagen or natural sheep casings, myself I prefer sheep casings or no casing at all..Why do you freeze them if you vac sealed? I have a few bags in my fridge for months and they look fine.
