Hey All:

I am brand new to this forum, and look forward to learning and (hopefully) contributing some tips and tricks. My apologies if this thread is in the wrong place.

So I just smoked some chickens (halved), brisket, and ribs. Will be (machine) vacuum packing some of this for a later date. My question has to do with refrigerating vs freezing. Being smoked and vacuum packed, how long can I reasonably expect this stuff to last under normal refrigeration ?

If frozen, how badly will the flavor / texture of the meat be affected ?

Any tips / info much appreciated.

HAPPY NEW YEAR !

I wouldn't leave anything in the fridge for more than 48 hours (unless packed in ice.)
In the freezer......It'll stay safe and edible for a very long time.
Unfortunately, the quality of most stuff suffers in the freezer from the get-go.
It's best to use it up in a relatively short period of time.

Only 48 hours in vacuum pack ? I can't imagine that smoked meat in vacuum pack wouldn't last at least a couple weeks, no ?
