Asked my favorite wife what we were having for valentine’s day since kids were going to be out with friends. She said ground veggie soup. Fortunately we were out at least that is what I told her. I happened to be driving by Costco so said how about surf and turf. She was on board. Prime Tenderloins were $20 off a package of 4, decision made what kind of steak. She doesnt like fatty cuts so was going to buy a pack of ribeyes and another of strip steaks. It worked out well with the tenderloins. Also had some small lobster tails wild caught from canada. They were like $7 a tail.
Dry brined the steaks in fridge all day and then coated with steak rub. Cut the tails down middle and a T at the end. Added salt pepper and paprika. Heated the yoder to 350 with deflector out and grill grates in and the second shelf in. Put the steaks on the grates and tails on top.
Turned halfway
Basted the tails periodically with butter, cooked to 140 IT. Cooked steaks to 125.
Plated and cut shot. Had shredded brussel sprouts with bacon, baked potato as sides. I am stuffed.
