Yesterday I used Sam Adams, garlic and butter and boiled it down for a marinade for a chicken. 

Today I had a spare Sam Adams and used it as a base for a jerky marinade base adding salt, pepper, garlic, brown sugar and onion rendered down on the stove. it smells like heaven. 

Just wondering if others have any recipes using dark beer.

Hey Alonzo,

I'm curious how long you marinated that chicken for and how it turned out. I'm considering marinating with a korean BBQ mix I use, not sure what meat yet. (Red meats usually turn out better in my opinion).  Thanks!

When I pan pork butts I always pour some dark beer in the bottom of the pan. They rest in the same pans with the beer usually overnight in the food keeper. All the juices from the pork butts mixes in with the beer. I pull in the same pan. The pulled pork absorbs every drop of the beer and juices.
