Using a bit of My home made Andouille from the freezer Red Beans and Rice *Instant Pot*

Red Beans and Rice take a long time on the stove top....

1.5 cups kidney beans soaked over night with a Tbs of baking soda
1lb (plus) Andouille sausge you made and smoked
1/2 lb diced thick bacon 1/8th inch cubes - you made and smoked
Medium onion diced
Bell pepper (I left out)
4 cloves garlic minced
1/2 tsp cumin
1 Tbs hot sauce
1/2 tsp salt
black pepper to taste

Now then....
I pan fried the bacon and Andouille to get some color on them and I could eat my kitchen!

Stir and make sure all is covered in water... IP high pressure 35 min with natural release

Man that looks good. We are a red beans family. Make them almost once a week. I have to ask, what does the baking soda do in the soak? We always just soak in cold water, but if I’m missing out, by all means please fill me in.
 
That looks great, We fell in love with red beans and rice in Louisiana and of course the andouille. I'll be watching for this.....
 
So it took about 1/2 hour of Saute on the IP and stir often to get he bean starch and the fat to combine and form a gravy.

But success! (cut the 2 1/2 cups of water to 2 cups and don't add water to cover)

The IP reduced the cooking time! Flavor outstanding.... I used basmatti rice because it has a meaty flavor..

I will also increase the dry beans by 1/2 a cup so not sure on reducing water....
 
Yes and need to find a way to double the batch ....

I have about 2 cups left and its just me this weekend
 
Dang, now you got me wanting to do it all over again. Last time I made this, it was all I wanted to eat, til there was no more. I did it completely in a conventional pot and it took 6-8 hours (partially because I had too much water and had to reduce it down).
I seldom have that much time to tend a pot. I feel like the pressure cooker is cheating a bit, but cheating or not, I need to give it a shot.
