Was making ribs on the BGE. I lit the UDS just to mess with it, wanted to make sure I could control the temperature. We were getting hungry so put a few hot dogs on it. Same hot dogs we have been eating for years. Same chunk charcoal we have been using for a while now. Hot dogs tasted different....a lot different.....than off of the the BGE. Enough so that I don't know if the Boss will be on board with me using it for ribs and what not....Hmmm.....
 
Hmm seems strange. Use my UDS, mini- WSMs, grill and get the same results, as long as I'm using the same heat source and smoke wood. Have you seasoned the UDS yet? How many smokes have you done on it?

Yes Sir, I did indeed season it. Twice. Have had at least 6 fires in it using the charcoal basket. One was a barn burner to get rid of the paint that was on it. Yesterday was the first time I had food on it, and like I mentioned earlier they were just hot dogs. Having burgers later today, going to clean the charcoal basket out and try it again...
 
Made burgers on it today, same slightly off taste. Weather permitting going to build a barn burner fire with the basket in the drum and if we still have this slightly off taste my UDS will become a burn barrel in the yard. Very disappointed.
 
Did it have liner or rust coating you didn't get rid of maybe?

I'd lean towards how you're burning your fire as a possible cause. Small hot fire is what you want and will give the best smoke. Also remember the UDS will have more combustion and combustion gasses than your BGE does and will give different taste. Drippings hit the coals and that will also contibute to different flavor to the egg. Try a diffuser if thats the case, it'll prevent as much drippings from hitting the coals.
