So if you use the UMAI salami kit is that like a hard salami or cotto or something else. I love hard salami for a sandwich, but not sure this is what I am looking for. And hate to say the example is Oscar Meyer hard salami.

UMAi will make a dry cured hard salami.

Nothin wrong with Oscar Meyer hard salami in my opinion . The result of doing Umai bags will not be the same . Like nepas said it's a hard salami , very good . However ,,, I have done the umai to a 30 % loss , then pulled from the bags and hot smoked to a IT of 152 . It was very close to Oscar Meyer . Salt content ( increased ) and texture was very close .
