I've been wanting to make salami and am looking at the Umai system. I'll need to get a frost free fridge and would like to know what others are using. Any suggestions would be appreciated.

Best,

I just use the extra house fridge . I shoot for 40% loss .

What brand and model is your fridge?
That's an older Kenmore side by side . Doesn't have to be anything special .
This is a hunk of pork cushion I did in the first fridge I bought when I was 25 . That was 40 years ago . Paid $500 at the Sears outlet store . Still running today .
The one above cost me $2600.00 and and only lasted 9 years .
Anyway . Nothing special . Just a top freezer bottom fridge will
work just fine .

T, I have used several full size refrigerators for Umai, the fridge just has to be frost free to suck out the moisture. Small college dorm fridges aren't recommended as I believe they aren't frost free.

My UMAI elk bresaola is doing great in the garage "in case of emergency" fridge. 10-year-old Kenmore frost free.
