Just wondering if I bought pre ground pork/beef mixture which is fine ground if it will work in the UMAI process? Has anyone tried this?

I would avoid it. Industrial processing is safe but not always pristine. When aging meat for weeks, even with cure, I tend to lean to the safe side and grind my own.
 
They recommend course grind,so that the meat can dry properly.

DWK, I have done some umai salami and I used either a 3/16 or a 1/4  inch plate which is sorta fine ground ? It came out alright with that grind.
