So i've had this brisket on for 5.5 hours and my probe was showing 161 so i decided to wrap.
However, when i placed my thermopop throughout the brisket i was getting temps of 205 to the 190's. Now i've only done one brisket before and it took a helluva lot longer than 5 hours so i'm gonna go with the probe on the grey thermometer. Anyone else experience this?

Whet temp are you cooking at ?
Don't use a Thermopop, but have always trusted my Smoke.
Take both probes from the smoke and put them in the brisket in same spot to confirm Smoke reading, and rule out a bad probe.

Are you talking the temp of the flat or point? Either way reposition both probes so they go in thru the side of the flat. Your probe tip may be too close to the edge of the meat for an accurate reading, or you may be in a fat pocket with one of them. You may also want to check the probes for accuracy in boiling water. Just to be sure.

Yep, try this. Then you are checking against a kniwn value. 212F unless you are significantly above sea level. Can also check the other end of the measurement with ice chips in water.

My temp qas fluctuating between 250 and 300
