Yesterday at 0700 I started two butts smoking for our sons graduation party later this afternoon. I made a few changes to my process for this smoke and I am extremely happy with the changes and the finished product. First I got a needle valve to control the flow of propane for the heat. Next I purchased a 12" tube smoker from A-Maze-N Products. 4 hours of continuous smoke was a god send. No more peaking out every hour to see if it's still smoking like I used to do with chunks/chips.
Started at 0700 and finished at 2200. Wrapped in foil and beach towel and rested in cooler for just over an hour.
