An 18 1/2 pound bird does not take six hours in an electric oven but only three.

The two smoked birds worked fine in the smoking it number three probably should've left the temp at 250 the entire time instead of dropping it down to 200 for a couple of hours . This just extended the smoking time and didn't leave much time to rest and cool as I burned the shit out of my hands.

Product turned out OK but could've been moister I probably should've brined longer. The oven one was too dry as it sat finished for about four hours... the smoked ones were ok.
