For Thanksgiving (yes, Thanksgiving Day is in October in Canada) I have a 1/2 bone in skin on turkey breast. I want to cook in my MES. Last time I ran it at 265 for 4 hrs. It is 5 1/4 lbs.

Just to be sure, I'm looking for minutes per lb for smoking.

Thanks & Happy Thanksgiving!!!

Happy Thanksgiving!

You can save cooking time by Spatchcocking a bird, with the benefits of faster and more even cooking.
The faster part works like this, simply turn up the temp, 275°, 325°, 375° whatever, and it'll just cook faster.

It is 1/2 of a bird. Our friendly butcher (and a client of our business) cut a bird in two.
