I have next week off and want to fire up the smoker on Monday to cook up some ribs for the week and get an old turkey breast cooked up. However I can't decide on when to take the turkey breast out of the freezer. would it make more sense to do that today if i want to cook on monday or tomorrow? I don't want it defrosted for too long but wouldn't want to try and go into cooking with it still frozen. It's about 5lbs if that helps.

Put it in the refer today, as above... IF you decide to cook sooner than Monday, put the Breast in a large pot, cover with cold running, just a trickle is enough, water. It will be defrosted in a couple of hours. Cook immediately if water defrosting...JJ

The day before you had that thought .
I put a whole bird , a bone in breast and a brisket in the fridge last Sunday . The brisket was ready to grind today . The breast is close . The whole bird needs another day or 2 .
I'm looking to inject and hold overnight or soak a day or 2 in Pop's brine .
