tuning plates

can anyone tell me about this!!!on my offset smoker(brinkman smoke n pit); if i install tuning plates, can i still use water pans and if so do i set them on top of the plates? does this effect the temp???Help!!!

Yes you can put tuning plates in your smoker.... in fact its a good idea to do so. The water pan can go on top no problem (at the firebox end), it will help you regulate your temp. and hold it closer to the 200-250 range.
