Trying no wrap baby backs...

Thanks everyone. Well...hmmm. Not sure what to think about this cook. I used the same sauce as last week...Killer Hogs....but this time the sauce seemed to take on a different flavor. I’m assuming because the sauce was on the ribs for so long this cook as opposed to last time. I’d say the sauce was on the ribs for an hour for this cook as opposed to about 30 mins last time. The flavor was just different...not bad really, but not quite as good as last week’s wrapped ribs.
The one thing I did enjoy however with this rack is the extra bits of char it had in places. I really like the crusty char pieces! I need to blend the flavor of the wrapped ribs with the char of the unwrapped somehow next time!

they look great along with that casserole, well now you know to hold off on the sauce a little longer next time you don't wrap, that's what's great about smoking even some of the things we think didn't come out the right way it's still delicious.

Those ribs turned out well. Look very tasty!

Just for reference, I did 2 racks of whole spare ribs today in the Yoder set on 240. I pulled them after 7 hours and they were very good. Maybe another 1/2 hours max but that's me nit-picking they were actually awesome. Bend test was close as well. No trim, no wrap, light coat of Meat Church Deez Nuts only opened the lid 3 times (1 time after 3 hours & 2 times in the last hour). IT was 175 to 185. a little Stubs BBQ sauce and it don't get no better than that.

When I don't wrap mine, I usually spritz them about every 45 minutes to an hour after the first hour. I use apple cider vinegar and brown sugar for the spritz.

I stopped wrapping anything unless there is a timing problem and I need to hurry it up - but i havent had that issue yet... happy about that.

I dont sauce during the cook anymore either. spritz sometimes near the end.
