I have a Master built propane smoker model 20050611

Here are some of the problems I have come across attempting my first smoking experience

1. I had no problem keeping the temp to 230-235 but as time goes on there is barely any smoke. When I raise the temp to 240-250 the unit starts to smoke. I'm smoking a pork shoulder and it's been in there since 6:30 this morning and as of 1:30 the pork inside temp is 165.

any suggestions at what could be going on???
 
It sounds like you're right on track.  Can you smell the smoke?

Just because you don't see any smoke, doesn't mean it's not there.  I have a MasterForge propane smoker, and I wondered the same thing.at first.  After a couple of hours I would no longer see the smoke but I could smell it.  This is what people call Thin Blue Smoke.

As for the time, you should gauge anywhere to 1 1/2 to 2 hours per pound when smoking low and slow.  How big was the shoulder that your smoking?  You'll find there will be a stall around the 160 to 170 range, which could last a couple of hours.

When I see smoke, I double check myself.

I would rather smell sweet, smoky, invisible goodness than a bunch of white billowing smoke.

It did finish, and much to my demise, it tasted wonderful. My pork shoulder was a bit over 5lbs. I pulled out at 2:30 PST let it sit for 30 min. and pulled it with a fork so easy. I did have that pink ring around the outer edge..
