Hi all, quick question.  I have had the Trigg method once, but can't remember the taste right off.  I use a rub with a decent brown sugar amount, and am worried that adding honey and brown sugar will make these things too sweet.  Anyone have any thoughts on rubs with brown sugar, and then a brown sugar topping before the foil?  Thanks in advance.
 
You can't argue with Johnny Trigg's success, but I am not a fan of sweet ribs.  I use a little brown sugar in my rub, but tend toward the savory side not the sweet.  When I see competitors on TV adding brown sugar, honey, and fat to their wrapping in order to place or win, all it does is convince me I never want to compete.

I've tended to not wrap at all in the process and still end up with tender pull off the bone ribs. Anyone else skip wrapping?
 
I do them both ways, depending on what mood I'm in.

I use a sweet & spicy rub & a sweet & spicy sauce.

Everybody has their own way of smoking ribs.

It may take you a while, but you will find your way too!
