So tonight was the big blow out before the school season, the boy starting his 1.5 year at the university and the daughter starting as a full time lecturer professor, so we had a party!!!!!

Started off with a full rack of beef ribs...

Did some comp style chicken biscuits....man these are a lot of work..... on the RT to set the skin and shape....25 min on the grate....

The biscuits go on a slice of butter skin side down....45 min (adjusting the time for the 265).....flipped skin side up ready for the final 55 min.....added some commercial sausage on as well...

Can’t forget the bling....my wife’s golden balsamic spinach berry salad.....HOLY CRAP this salad will make the truest of meat eaters eat raw spinach..... LOL

What a great meal, in the last 2 weeks we dropped our daughter back at ECU in NC and visited my son in NH before he starter teaching in a new district up there.

Can you elaborate on the competition biscuits? That is a new one for me.
 
HOLY COW!! What an amazing array of food!! I'd have been more than proud to sit down to a platter full of that. Simply outstanding. I know it must have been a ton of work but man oh man, it had to have been worth it. Beautiful job all around.

Competition biscuits. Well these are what I call the chicken thighs that are prepped for a BBQ comp. For competition biscuits, the goal is to have a perfectly cooked chicken thigh that one can bite trough the skin with no pull or tearing, ie its not crispy but tender and flavorful.

They can be bone in or boneless. I prefer boneless, they also have the two veins removed so a nice clean chicken bite. The fat is trimmed clean and then the skin is scraped to remove all the fat, which leaves just the paper thin skin. The thigh is then seasoned all around and under the skin and wrapped up in a nice biscuit shape. Some even use a small square biscuit pan to cook them in. Then they are smoked in a butter pan skin down for the first stage then skin up for the second phase.....

Notice how clean and thin the skin is...

you can see on the second to last slice that I missed a bit of fat on the skin....this would have pulled if a bite were taken and you can even see it separated from the meat in the pic..... When the fat is removed the skin "bonds" to the meat and makes a nice savory bark....

Much appreciation Robert! The chicken was the most work for me, and the wife did the other stuff so I just sampled and taste tested along the way.....IE I was full before dinner was ready!

Had to have a lunch time snack! Walked out to the garden and picked a couple of maters and heated up a glazed biscuit and a zero drink..... Oh man yum!
