Tri tip like a brisket…

So…I heard the talk and since I do 3-4 tri tips a month I thought I’d try.

No joke, it’s some of the best beef I’ve ever done!

It took longer than I expected (about 6-7 hours) and it’s hard to justify sometimes with such small cuts…which is why I did two together…but this was amazing. I would have posted more pics but the kids had them gone in 10 minutes…
 
Sure turned out great and sounds like a home run with the family!
We sure enjoy that method at my house too!

I've done a couple 'brisket-style' with mixed results. One was excellent, one was just OK. What grade of meat did you use?
 
that does look great! Maybe i should just try one of these. I know i have been against it but that does look fantastic.

This far east, the only reason I know what a tri-tip is is because one of the processors I use suggested I try one when I was doing my cut sheet on a beef I was having processed. I took them up and was glad I did!

you guys could always buy online CPB etc. but this gets cost prohibitive real fast. I mean I ordered from CPB a couple times, but couldn't stomach it anymore.

not sure if this would help, maybe check with the Costco butcher close to you and see if they can get a few? I mean out west they have all the time. just a rando thought.

We now have tri-tip available in local grocery stores, but they are always the overpriced, pre-seasoned vac sealed ones.

One of the butchers told me that they once accidently got a shipment of a case of plain tri-tips and they flew off the shelves.

I cant bring myself to buy pre-seasoned meat like that. I fear they are salt bombs.

Prime grade. I went back and forth prime/choice but thought since there isn’t any fat cap I’ll go prime.

I’m with you. They never use a good rub anyway. For beef like this I only use salt and pepper with just a touch of Lawrys seasoned salt anyway, cause the smoke and the beef are the flavors I want.

Thanks fellas. Yeah in the end it went great. It was suggested I give it another go since there wasn't a ton to go around (one of them went next door to the inlaws) so we're gonna try again tomorrow.
