I smoke turkeys every year, however this is the first I've done on a Traeger. Naturally I referenced their recipe app, and it has me concerned....

It says to put the turkey in on the smoke setting (for my Traeger thats about 180), and leave it there for 2.5-3 hours....then bump it to 350 for 3-4 hours.

Am I crazy, or does it seem like this will leave a 13lb turkey in the danger zone too long???


Does anyone have other suggestions? We usually eat around 7, so I have time
 
If you don't truss the bird, tie the wings and legs, it will cook from all sides and you will be fine.. Take the bird to 165-170 ish... check both the breast and thighs for temp..
A 13# bird may be done in 3 hours.... if not, it won't take long at 350, after the smoke session....
Thigh temp should be taken on the inside of the thigh, between the thigh bone and cavity... I read that somewhere... It's supposed to be the last place, on the bird, that comes to temp...
 
After 2 hours on smoke its at 115*, so I guess its on track. I went ahead and bumped it to 250* for the next hour and will re-assess then. I'm trying not to let it get done too early, but I also don't play with the danger zone
