Well I am back again. I am getting rid of several old smokers Bradley Puck smoker, the button cover is falling off, Old Master built 30" that burst into flames (no, just melt the controller and some wires, a master build analog electric that has seen better days. I used it the most, but the latch broke. And got lots of good food from it.
I picked up a Traeger 780 Pro. Now for the cleaning. It has not been used for a number of years, so kind of cruddy inside. I have scrapped a LOT of crud and grease out now. Enough to half fill a dustpan,
What do you all used to clean it up? I have scraped a bunch of stuck on grease, and the like. I have seen some had said to use 'Super Grease Remover'. Is it the best overall? What about oven de-greaser. I know that people use it in ovens and then cook food in the oven. Am I just forgetting something basic?

Also, the 780 had a cold smoke generator attached, Smoke Daddy Big Kahuna. So another question. What flavors do you smoke cheese? And how long? Now that the temps are below 100 degrees (90 -104degrees) I thought that I might give it a try.

No-one has a comment about cleaning with oven cleaner. how odd.
 
I would just scrape/brush the heavy stuff, the I would just fire that 780 up as HOT as it will go. Then let it burn off for a 1/2hour or 1hour long.

OK, thanks. I have done that, I just wanted to give it the best shot. As I said, it has not been used for a bit. I think I got about a gallon, maybe 1.5 gallons of leaves, dirt, crud, grease and gunk out of it and the stack.
It looks pretty good. I have tried it twice with chicken thighs. My wife did not like the first time, first was maybe chewy skin. But said the second bunch was pretty good. So I am learning. I think I like it, (the Traeger) time will tell. Maybe burnt ends next weekend.
I haves mostly just used mesquite and hickory. I had not thought of apple, cherry, or maple. So I am not sure what and what to expect when smoking, using those. I have smoked for about 5 years, so I am very protected(??) or a newbie about other types (and cold smoking)(lol).
