Tourist is a small Russian sausage and convenient item for tourists and travelers. Meats are the same as in Tambov sausage but different spices are employed. Similar to Polish Kabanosy meat stick which is made of pork only.
Where you see a star * this is not in the actual recipe. These add ons I decided to add. And the meat ratios are totally different also.

beef 2,267.96g
pork 2267.96g
Back Fat 500g
Total 5,035.56 g

salt 180 g
Cure #1 12.564864 g
pepper 20 g + garlic 35 g =55g
caraway 10 g
Amesphos 15 g *
2 tsp Cayenne pepper (add more for additional heat)
1 tsp hot smoked Paprika *
2 Tablespoons mesquite powder. *
cold water 500 ml
1 Tbsp Home Made Hot sauce *

Store in refrigerator till smoking time.

Got a late morning start with these and forgot just how much of a pain small sheep casings are :)
Right from the get go I had a blow out but soon recovered and managed to tick off 10 pounds.
Sitting in the fridge over night and will smoke them in the morning.
What was left in the stuffer neck got made into 2 patties.

Up early and got a early start.
Morning temp is 21°F
Great day for smoking :)
Took a while for the smoker to get up to temp but they are coming along just fine.
Going to do a double smoke at lower temps and finishing them off in a hot water bath.

Sampled one this morning and thought they would be a little hotter but they actually were just about right. The heat kind of come on a little at a time. Next batch I wil up the heat some. Moisture on the sticks is perfect. I have made some that tasted like sawdust before LOL but these are great. Have them hanging in the basement for a few days. Then vac pack.

KBF, Nice job on those sticks and using sheep casings makes you a real hero!
Not sure about being a hero but I managed to remember a few tricks I have learnt from others on the forums. Actually the hardest part was getting them started onto the stuffer tube. My fingers don't work like they used to when I was 20 :emoji_laughing:

Yup . I use the 3 strikes you're out method . Doesn't start in 3 tries I grab another one .

I keep forgetting I made this little gadget that I saw on a facebook group page. His was store bought but looked simple to make. Used a clothes hanger soldered together and heat shrink tubing for protection. The small end is suppose to make it easy to lace the casings on and you insert into the tube end and slide the casing onto the tube.
