How can avoid that think white smoke?  Ive tried everything.  I started a chimney of coal, added three logs of apple wood and let it go wide open with the cover off for an hour and a half.  I put the cover on and white smoke still billows out.  I think a rack of ribs and a batch of Dutch's beans at ruined.

This happens about half of the time with my UDS no matter what I try.  Sorry for venting (pun intended).  Any help would be appreciated.

Pocketaces, you said you put some logs on the charcoal? Maybe a bit large or too much? The UDS gurus will chime in shortly;meanwhile, cut back on the 'wood'.

JMHO........;}-

Thats what I am thinking..Most guys just use a few chunks of wood not logs...
