Tonight's Meal - Smoked, Reverse Seared Steak

I was craving some steak so I figured I should involve my smoker

Here were the chosen candidates.


I gave them a little fresh ground sea salt.


& into the MES they went to soak up some smoke..

Wow, you eat like a king.
 
When the steaks were getting close to being done smoking I fired up the charcoal chimney & got the grill going. I raised the charcoal up so that it was right under the grates to get them as hot as possible. Once the steaks got to 105* I pulled them from the smoker & put them on the grill.


Here they are on the grill for a  quick sear on each side.


Off & taking a little rest.

While they were waiting I mashed some potatoes I had boiled.


Time to eat!

  I cut the piece out of the first steak to show you the perfect color but somehow it was incredibly blurry

Very juicy! These steaks had a great flavor & were very tender - they never stood a chance once I tasted the first bite!

MMM!!! Smoked & seared over charcoal, or mesquite lump...that's got to be our favorite way to cook and eat smaller cuts of any kind, I think. It's the best of both worlds, IMHO. And a meat & smashed taters meal? I'm all over that!!! Looks like a winner dinner!!!

Thanks for the reminder (I don't seem to do this often enough lately, but I'm getting better).

Now if you had a Mini-WSM you'd have a one stop smoker, searing machine! Love doing the reverse sear on the mini!

A silver will work fine for a mini won't it?

Certainly will! Both of mine are silvers. I did add side vents though. But even without the vents it will work. Look at my $5 Craigslist thread. That'll get you started. I would cut the full bottom out of the tamale pot and not bother with drilling a billion holes!
