Spotted a decent price on an almost 3lb Tomahawk at Sam's and decided this weekend was the weekend to try out the new Recteq for the first half of a reverse sear, and somewhere here I read about using a charcoal chimney with a grate for a "grill" for the sear part.

Was shooting for 140* final finish temp. Smoked on the pellet smoker for approx 90 min at 235* to 125* and got the chimney ready. Filled about 1/2 full with charcoal and sarted it while I was shutting down the pellet so it wouldn't be too far along.

Steak was 131* by the time I started searing it and as the fat rendered, it started flaring pretty good so had to keep a good eye on it and move the steak around some and flip it a couple times but it worked really well... Will probably use a little less charcoal to reduce the flame/heat slightly next time but love the chimneyidea for a quick, easy "grill".

Steak came off at 142* and rested for about 10 minutes before slicing. It looked like a perfect medium and with just a simple SPOG for the rub, it tasted fantastic. Little baked potatoes with butter and sour cream for a side... 😋

Now that's cooking with fire! I love it! Steak looks perfect and how can you beat meat and taters!

Nothing better than a perfectly cooked steak in my opinion. Well done (or should i say perfectly medium) my friend!
 
That is perfection! Fire, Ribeye, & a large bone. Just beautiful and now I want one. I don't think it's overrated at all. Great pics and I bet it was good!
