Like the title says, I live in North Central Illinois.  I've been smoking since Summer 2011.  Started with an ECB but moved to a Masterbuilt electrice with remote. I love that smoker! All the flavor and I don't end up hacking that night. I can smoke in the middle of summer and the dead of winter without issues!

Mostly I smoke pork and chicken.  I've been making a lot of bacon lately. Buying the bellies, curing and smoking.  It's fun and the taste is out of this world!
