2 racks of spares...coated with SPOG wrapped and fridged for two days...

WSM filled with KB and pecan from the yard tree..

Guru chugging along at 225..

Rib racked for 2.5 hours then into a pan with apple juice, garlic and old bay and covered tight with foil.

Out of pan after 2 hours and on the grate for 3/4 hour...

Perfect!!!  Tender and juicy!!!  

No more cooking for me today...the kitchen is closed...

  I have never used Old Bay on ribs but I'm curious now. I just might have to try some on my next rib smoke - did you use a lot of it in your pan?
