todays jerky snacks

today's batch of jerky snacks. i call them snacks because i make them on the softer side for my mom and others that dont like the dried out version of jerky. Hickory season with an apple/hickory mix of pellets.

I seasoned last night and let sit in the fridge over night. I usually use the tip that is round and dont like the one that is two narrow flat one because stuff gets stuck in the center piece. Did not realize i have one big flat one and thought it was to big but is a good size.

lol yes i dont need any more rebuilt parts. so far two knee replacements and three back surgeries to repair two pinched nerves two bulging discs and 2 cracks in my spine lol
 
How long do they last with that brand of cure/seasoning? I would assume a bulk go into the freezer and just pull out as needed?
 
yup i freeze what cant be eaten right away but i give most of it away lol

Thanks.. That is what I assumed.. Jerky is the next thing I want to try and just trying to get a grasp of things, since jerky you buy in a store can last for a while, but things like this will need to be frozen.. Just a change of how I do things.
 
I think I would start with the same type of seasoning.. All in one box ready to go. I used that brand about 15 years ago, and remember it working well in just the oven, but now that I have the smoker, I wanted to try again.
 
what do you have for a smoker ?? i have a pellet smoker and the high smoke setting is 220 average and i go two hours on high smoke. Others go longer on low smoke ( 165 average) because they want it dried out typical jerky. I make it softer because my mom cant chew the leather type and the family likes it softer as well. I have actual jerky racks for my smoke but search my name for jerky snack sticks or maybe home made jerky racks if you dont already have something in mind to cook it on
 
I currently have an MES30..

I keep go back and forth between jerky and sticks, as to what I want to make. When I got my first batch of seasoning, I got a jerky canon with flat and round extrusion, and also some racks.. Although, depending on how I do it, I could always hang things in the smoker.
