So is it all about the baja sauce?
Haha, I had to dig up one of my posts from a couple years ago. these are good ones.

The chipotle one was a little thick so use the recipe below.

I think the best thing is to grill the fish instead of deep frying it. If you use corn tortillas heat about 1/4" of oil in a pan to high heat. Place the tortillas in it for just a few seconds per side then place them between paper towels to absorb most of the oil. They will become very flexible and not fall apart that way.

Originally I thought these fish taco sauces were were quite light but no longer do. Kinda wild as I make a doner kebab sauce and base is greek/mayo so know it works well.

Yeah agree but Lake Erie fish is best fried so that's what I have to work with. In my diving, looks like I should aim at like Taco Nazo for fried. I read the salsa or sauce they serve is the magic. Know if there is any spice added the fish itself? Either in breading or on top?

When I pan fry a fish I lightly cover it in olive oil. Then I lightly spread on one of these on it. Kinder's makes the best rubs and these are my favorite for fish.

If you have a local place that you can get salsas from go for it. Sometimes I make my own but also just buy it from a local Mexican grocery store from time to time. If they make it taste great just go with it.
