I finally have a weekend where it’s not raining, not 95 and not 80% humidity.

Watched a video from Ernie Tex on smoked carnitas and have been dying to try it because I love me some carnitas tacos.

Cubed up, seasoned with black pepper, some Badia taco seasoning, a garlic jalapeño rub and a pork rub I had. On the smoke at 225F, spritzed with Coke after an hour, flipped and waiting on 170F to wrap.

Till then I’ll drink coffee, not sweat for a change and watch the hummingbirds fight over who has control of all four feeders.

Time to wrap. Added about a third of a jar of Wagyu tallow, the rest of the coke, onion and squeezed two oranges.

Back in till it hits 205

Carnitas? Hmmm... Sort of a reverse process.
Smoke-n-sear followed by a not-quite a confit, but the same result.

Whatever, it looks damned delicious on my monitor.

Before chopping it up I did a quick sear in a pan. Definitely good. Smashed five tacos. Will do again
