Getting divorced, sold our house and getting ready to move, but I thew a surprise birthday party for my soon to be ex / last big blowout party before moving out at the end of the month and (unfortunately) leaving my egg behind. I threw these briskets as well as some jalapeño sausages (not pictured) on the smoker for the event. I started smoking them at 2:30am and it took about 13 1/2 hours to smoke and they rested about 3 hours wrapped in foil, inside of towels, inside an ice chest. The party started around 6:30pm and we only ended up eating about 90% of one of them. At 1:30 in the morning (yes, it was a heck of a party!) I started to clean up and put things away. I remembered the other brisket and more sausage in the ice chest so I took them out to put them away. They were not only warm, but the foil was still HOT! I'm amazed how long this method of keeping them warm works!!
